A leading company in the Japanese restaurant field is currently recruitingHead Chef and Sous Chef to join their expanding and growing business. In this role you will be responsible for managing daily operations of a busy kitchen. The duties include managing a team, recruitment and training, ordering and stock control, food wastage management, food quality control and food preparation.

Ideal candidate:

• Must have at least 5 years proven senior kitchen experience in a Japanese fine dining restaurant
• Excellent cooking skills and understanding of produce and ingredients
• Excellent knife skills
• Sashimi and sushi skills would be highly beneficial
• Have previously held responsibility for a kitchen operation and team
• Ability to work under pressure in a busy environment
• Passion for working in the kitchen and food quality
• Attention to detail
• Excellent communication with staff of all levels
• Friendly and approachable personality
• Team leading and leadership skills
• In depth understanding of Food Safety standards
• HACCP Qualification is beneficial
• Ability to multi-task with "hands on" approach to work
