Bakery Creative Manager

A leading F&B Group specialising in East Asian food products is seeking an experienced Manager to oversee their bakery section of their business. In this role you will be responsible for creating new bakery and pastry products in line with the Company standards.

The role will cover various locations across London including Central and West, overseeing manufacturing and warehousing as well as retail operations in Central London.

Core Duties

Monitoring and controlling the food items used as ingredients in the bakery with accurate allergy information recorded on labels
Setting quality standards within the production team and ensuring adherence through the monitoring of food quality from the bakery, ensuring quality and hygiene standards are maintained throughout the food production process
Displaying awareness and management of your most profitable and bestselling lines
Displaying awareness of recipes and production procedures
Assisting with cost calculation for new products and setting up sales price, to be agreed with the operations manager
Ensuring the bakery is kept to a high cleaning and safety standard
Liaising with site managers adjusting levels of production accordingly to order
Ensuring all goods are correctly priced and labelled to legal standards
Working with the production team and Food Hygiene Controller to develop nutritional content to optimal standards
Managing work schedules ensuring efficiency in the completion of work volumes within measured timescales
Assisting with development of new bakery products and promote them in an effective way, through marketing liaison
Planning and implement training of bakery team, liaising with HR and Food Safety and Food Hygiene Controller
Attending monthly management meetings as required
Attending any other meetings as required by the business
Ensuring outstanding visual standards for customer impact
Liaising with the marketing team and operations manager to deliver new lines, promotional volumes and any other requests
Structuring and maintaining efficient production processes within the bakery which are time and cost efficient
Maintaining recipe cards for each item produced
Maintaining an accurate and up to date allergens file
Reporting any maintenance issues
Ensuring regular and timely communication with line management
Together with the management team, devise and present Company goals and strategy to colleagues to ensure transparency and unity.
Build strong relationships with clients and suppliers, including consultants
Managing and developing colleagues, scheduling and supervising new team members

Finance and Accounting duties

Maintain monthly expenses budget: keeping record of all expenses on a monthly basis; planning ahead on any projects and/or tasks
Report Performance data via weekly/monthly/period reports as required – examine trend data and exceptional items, taking corrective steps in a timely manner
Payroll controls, to hit plan – support HR with monthly analysis of controls
Food cost controls to be within agreed budgets including stock loss and shrink
Record and report any ordering costs and cash loss
Maintain and track agency and contractor expenses
Equipment and dilapidation cost controls reported monthly – manage contracts wisely, spending in a prudent way
Report on any accounts or sales exceptional items – monitoring ‘complimentary losses and any site cash discrepancies.
Manage food waste to prescribed and agreed limits
Forecast any operational CAPEX (Capital Expenditure) needs, supporting proposals
Control costs on other expenses such as uniform, stationery and travel.
