An established hospitality organisation is currently recruiting a Sushi Chef to join its Japanese restaurant kitchen team. The role focuses exclusively on preparing sushi dishes at the sushi counter under the supervision of the Executive Chef.
The successful candidate will prepare maki sushi, nigiri sushi and sashimi to consistent standards while maintaining food quality, hygiene, and effective communication between the restaurant and kitchen teams.
The ideal candidate should have extensive knowledge and practical competency in sushi and sashimi preparation, together with a strong understanding of food hygiene and HACCP guidelines.

Main Responsibilities
• Prepare maki sushi, nigiri sushi and sashimi to a consistently high standard
• Follow standard recipes and instructions from the Executive Chef to ensure consistency
• Maintain the restaurant’s operational guidelines, standards and procedures
• Work closely with the kitchen and service teams to create a positive guest experience
• Provide guests at the sushi counter with information about menu items, ingredients and preparation methods
• Carry out quality control of food ingredients and maintain appropriate food hygiene standards
• Contribute ideas and suggestions to support continuous improvement of the operation
Ideal Candidate
• Extensive knowledge and practical competency in sushi and sashimi preparation
• Ability to prepare maki sushi, nigiri sushi and sashimi to a high standard
• Familiarity with local food hygiene and HACCP guidelines
• Strong teamwork and communication skills in a disciplined kitchen environment
• Ability to manage pressure and maintain quality during service
• Guest-focused approach with the ability to explain menu items, ingredients and preparation methods
• Ability to contribute positively to team development and operational improvement
